Goat Ragu with Red Wine

Ingredients

1.5kg goat meat on bone, chopped into chunks

2 tbsp olive oilMJwide-20140602110659531011-620x0

2 onions, halved and sliced

2 carrots, peeled and sliced

2 celery stalks, finely sliced

2 garlic cloves, finely sliced

300ml good red wine

400g canned tomatoes

2 tbsp tomato paste

1 tsp sugar

300ml of chicken stock

3 bay leaves

1 tbsp chopped thyme or rosemary, and extra for serving

1 tsp dried oregano

good pinch of dried chilli flakes

sea salt and pepper

Method

1. Rinse the goat, pat dry, and season well. Heat one tablespoon of oil in a lidded ovenproof pan and brown the meat in batches, on both sides, then remove.

2. Add remaining oil and cook the onion, carrot, celery and garlic for 10 minutes until softened.

3. Add the red wine, tomatoes, tomato paste, sugar and stock, and bring to the boil, stirring.

4. Heat oven to 160C. Return the meat to the pan with bay leaves, thyme, oregano, chilli, sea salt and pepper, cover and cook in the oven for 1 ½ to 2 hours until tender. Skim off any excess surface fat, scatter with extra herbs and serve.

Wild Boar Ragu

It’s time to share an Italian inspired Game Meat recipe from one of our customers Charles from Cha’s Kitchen!

INGREDIENTS

500g Wild Boar (Diced)
100g diced pancetta (rind removed)
1 brown onion finely chopped
2 large carrots finely chopped
2 celery sticks finely choppedimg_1621
1L Vegetable stock
1 bottle dry white wine
800g cherry tomatoes
Parpadelle
Parmesan

METHOD

1. In a heavy based pan sweat off the onion, carrots and celery in olive oil over a low heat until they become translucent(very soft), don’t allow them to get any colour. Remove from the heat and set aside.
2. In the same pan brown the boar and season with salt. Once browned well set aside.
3. add the pancetta and cook until the fat begins to render, set aside.
4. Deglaze the pan with the white wine and reduce.
5. Add the sofritto(celery, onion, carrot), boar and pancetta. Add the stock and simmer gently on a low heat for 3-4 hours.
6. In a separate pan, heat some olive oil and add the cherry tomatoes until they begin to break down. Add to the other pan and fold in. Continue to simmer for another hour.
7. That’s it! Serve with parpadelle and some good Parmesan cheese.

Duck, mandarin & chestnut ragu by Karen Martini

Now that spring is nearly here, why not try some duck?

This is a recipe from on of our customers, celebrity chef Karen Martini

serves 6 mains
prep time 45mins (approx.)
total time 2hrs 15mins (approx.)

INGREDIENTS:

6 duck marylands
salt and pepper
20 chestnuts
60 ml extra virgin olive oil
1 brown onion, dicedHERO_RP000060_DuckMandarinRagu (1)
6 cloves garlic, peeled and sliced
1 bay leaf
4 mandarins, zested and juiced, plus extra mandarin segments for garnishing
2 leeks, finely sliced
2 medium carrots, finely diced
4 celery stalks, finely diced
5 sprigs thyme
300 ml verjuice
2 teaspoons allspice
approximately 1 litre chicken stock
1 bunch cavolo nero, washed and chopped
100 grams pasta per person
parmesan cheese, to serve

METHOD:

Preheat the oven to 220C.

Trim the duck marylands of excess fat and cut them into thigh and drumstick. Season the duck generously with salt and pepper. Roast the duck pieces on an oven rack for 15 minutes to render away some of the fat and turn the skin crisp and golden. Remove from the oven.

Score the chestnuts. Boil a pot of water and cook the chestnuts for 15 minutes. Remove one at a time and peel off both layers of skin. Slice and set aside.

In a large heavy-based pot, add the oil, onion, garlic, bay leaf and a little salt. Gently sweat over medium heat, then add the zest, leek, carrot and celery. Stir well then cook over medium heat for 15 minutes or until golden.

Add the thyme, duck, verjuice, mandarin juice and allspice and simmer for 5 minutes. Add enough stock to cover well and simmer for a further 40 minutes until the duck is about to fall off the bone.

Cook the pasta according to packet instructions, if using.

Remove the duck from the pot and add the cavolo nero. Continue cooking over medium heat for about 20 minutes, to cook the cavolo nero and reduce the sauce a little. Tear the duck meat from the bones while it’s still warm, skin and all but no gristle, and return to the sauce.

Season the ragu with lots of pepper. Add the chestnuts and the cooked pasta or gnocchi, if using. Add some peeled mandarin rounds and offer parmesan cheese grated at the table.
